Food reveals the social structure of the place where it is eaten. It tells us what people are willing to put into their bodies, what disgusts them, what counts as tasty, healthy, beautiful or creative, and where the lines run between everyday and festive, homely and foreign, comforting and strange. Time matters too: what you eat in the morning, what you save for the weekend, what you serve guests, and what you buy on the way home on a cold day.

In Denmark, carbohydrates are part of how society meets cold, darkness and urban pace. Bread, butter, coffee and a morning pastry are not just something you eat. They create closeness, homeliness, comfort and local pride.

Over the past decade Copenhagen has undergone a culinary shift that moved beyond grand restaurants into the city's everyday institutions: bakeries. A new generation of bakers took Danish baking traditions, sourdough, butter, local grains and contemporary techniques, and turned bread and morning pastries into one of the best ways to understand the city.

The map before you was built by architect and pastry chef Ofer Bar Lev. It invites you to look at two foundations on which Copenhagen stands: sidewalks and carbs (Carbs & Curbs).

Ofer worked as an architect for 14 years, and in 2018 completed professional training at Meir Danon's pastry school. In 2023 he returned to live in Copenhagen for the second time in his life, with his partner, and founded Carbs & Curbs — culinary and baking walks on the city's sidewalks.

This map connects bakeries, neighbourhoods, baking traditions and stories of place. It will lead you to some of Copenhagen's best bakeries, mark what to taste, what to notice, and what cultural story hides behind each stop.
